Jet's Mean Beans
1/2 lb. 40% less fat bacon
1 large onion, sliced thin
2 buds or 2 tsp. minced garlic
Juice of 1 lemon
2 16 oz. cans Campbell's plain pork & beans
1 c. light brown sugar (can be just 3/4 c. & still be fine)
1/4 c. K.C. Masterpiece Original flavor Bar-B-Q sauce
Dash EACH salt & pepper
In an iron Dutch oven, fry bacon till just crisp; add onion
& garlic & cook till onion's clear; stir in juice & cook a
minute or 2. Add rest of ingredients, stirring in gently.
Simmer, stirring occasionally, for 1 1/2 hours. Best tasting
if cooked a day ahead, chilled overnight, then re-heated.
Serves 4 or 5. Walt has increased it many times, but it
takes more pots, then can be combined in a big aluminum pan.
Thanks to Jet Smith of LA, and to Marcelle Bienvenu, who
passed it on. One of Walt's top potluck dishes.
