Chocolate Zucchini Bread
This recipe makes a dense bread that is delicious and moist.
The yogurt takes the place of oil. Low
cal (90 calories a slice)
Mix:
2 eggs beaten
1 cup peeled, grated zucchini
2/3 cup sugar
1/2 cup low fat vanilla yogurt
1 tsp vanilla
Mix in separate bowl:
1 1/2 cups flour
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp powder
Add the flour mixture to the egg mixture, mixing the batter
as you go.
Pour the batter into a loaf pan, coated with cooking spray,
and bake for one hour in 325 oven. Cool completely on wire
rack.
