For Linda in Michigan wanting recipe for green beans like
Chinese restaurant:
Chinese Green Beans
1 lb. fresh green beans
2 green onions, chopped with greens
2 cloves of garlic, minced
6 thin slices of fresh ginger
3 Tbs. sesame oil
1 tsp. brown sugar
1/2 tsp. salt
2 Tbs. soy sauce
1/4 cup water
Cook the green beans in boiling water (to cover), 3 to 4
minutes. Drain and plunge into cold water to stop the
cooking process. Drain on paper towels. Cook green onions,
garlic and gingerroot in hot sesame oil in a skillet 1
minute, stirring constantly. Add sugar, salt and soy sauce.
Cook until sugar dissolves, stirring constantly. Add the
green beans and water, reduce heat to medium and stir-fry
for 3 minutes. Best if served immediately but they carry in
a nice covered casserole dish very well. Serves 4-6. This is
the only way my kids will eat green beans so we make them up
to go with chicken, beef or fried rice and dumplings.
