Judy from Phoenix, AZ, these funnel cakes are yummy! We have them
every year at our county fair! They are very easy to make, also.
Amish Funnel Cakes
3 eggs, beaten
2 C. milk
1/4 C. sugar
4 C. flour, sifted
2 tsp. baking powder
1/2 tsp. salt
To beaten eggs, add milk and sugar. In separate bowl sift dry
ingredients. Add to egg mixture, beating until smooth. Heat oil to
375ºF and pour batter into hot fat through a regular household
funnel. Control the flow of batter by holding your finger over the
bottom of the funnel. Make patterns, designs, swirls or whatever
with the stream of batter as it flows into the hot fat. When "cakes"
are golden brown, drain, sprinkle with confectioners' sugar and

Here is your chocolate mayonnaise cake recipe. There was also one
posted on 2/8/09 also that was submitted by Heather.
Mayonnaise Cake
2 cups all-purpose flour
1 cup sugar
5 tablespoons cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1 cup mayonnaise
1 cup water
1 teaspoon vanilla
Mix all ingredients together in the order given. Pour into a well
greased and floured loaf pan, or two layer cake pans that have been
greased and floured. If using a loaf pan bake at 350 degrees for
45-50 minutes. If using 2 layer cake pans bake at 325 degrees for 30
minutes. Then when cool frost with your favorite frosting. Jo,

Thanks, Kathy in Kansas, you didn’t say what ingredients were in the
biscotti that you are looking for. Pillsbury has only 2 recipes on
their web site for biscotti. I will check in my Pillsbury cookbook
to see what I find. However, Nancy has several biscotti recipes.
Just type in biscotti in the search area and click on Nancy’s
Kitchen. This is a favorite of a good friend of mine.
Holiday Cranberry
and Pistachio Biscotti

1/3 C. butter
2 eggs
mix together in sep. bowl:
3/4 c up dried cranberries or cherries
3/4 cup shelled green pistachios
2 cups all purpose unbleached flour
1/2 teaspoon cinnamon
2 teaspoon baking powder
2/3 cup sugar
Beat butter on medium speed for 30 seconds. Add eggs and beat on
medium until well combined. Using a wooden spoon, stir in remaining
ingredients just until combined.
Divide into 2 loaves on cookie sheet, chilling if necessary to make
dough easier to handle. Each loaf should be about 9 inches long and
2 inches wide.
Bake at 375°F for 25-30 min or until a toothpick inserted in the
center comes out clean. Cool on sheet for 1 hour.
Cut each loaf diagonally into 1/2 inch thick slices using a serrated
(bread) knife.
Place slices on an ungreased cookie sheet. Bake at 325°F for 8
minutes, then turn over and bake for 8-10 minutes more or until dry
and crisp. Transfer to wire rack to cool. Makes 32 cookies. Posted

This is for Judy AK who in the 3/7/09 newsletter wanted green fruit
salad recipes and green punch recipes for her St. Patrick’s Day
pitch-ins. The salad recipe is at least 40 years old.

Lime Salad Supreme
Prep: 10 min, plus chilling time.
1 cup canned crushed pineapple, drained, liquid reserved
Hot water
3 ounces lime gelatin
10 large marshmallows
1 cup cottage cheese, drained
1/2 cup walnuts or pecans, chopped
1 cup light frozen dessert topping like Cool Whip
8 lettuce leaves
Add enough hot water to reserved pineapple juice to make a total of
1-1/2 cups. Heat in a heavy saucepan over medium high heat. Stir in
gelatin until dissolved.
Add marshmallows and stir until dissolved. Chill until mixture just
begins to set. Stir in pineapple, cottage cheese and nuts. Chill
until partially set.
Fold in whipped topping. Pour into mold or a 9 inch glass baking
dish and chill until set. Unmold and serve on lettuce leaves.
You can also add grapes, strawberries or other fruit of your choice.

Lime Sherbet Punch
2 quarts lime sherbet
2 liters ginger ale
1 (46-ounce) can pineapple juice
Lemon slices
Lime slices
Maraschino cherries
In a punch bowl, add 2 quarts of lime sherbet. Then add ginger ale
and pineapple juice. Decorate with lemon and lime slices and some
maraschino cherries. You can add green food coloring to make the
punch a darker green.

I am looking for either a recipe or way to fix the
rice noodles I bought. They tell on the
back to boil in water for 3 min then do whatever you want with them.
I need to know what seasonings to use. I had them in a Restaurant in
Savannah called Saigon and they were delicious.

I was curious about your
stuffed peppers? What kind of crackers do you use? Also
are the tomatoes canned or fresh?

This is to Laura in Ct. My mom made a similar dish for us growing up
in the 60's-70's. She took whole tomatoes,
and broke them up in a pan, and added slices
of Kraft cheese slices. She heated this up until the cheese
was melted, added salt and pepper, and crushed saltine crackers
until thickened. Sounds odd, but it is DELISH! I still make it
occasionally for side dishes!!

Chocolate
Mayonnaise Cake
3 c unsifted all purpose flour
1 1/2 c sugar
1/3 c cocoa
2 1/4 t baking powder
1 1/2 t baking soda
1 1/2 c mayonnaise
1 1/2 c water
1 1/2 t vanilla
Grease 2 8 inch pans - flour only bottoms. Sift dry ingredients into
large bowl. Blend in mayonnaise. Gradually stir in water and vanilla
until smooth and blended. Pour into pans. Bake at 350F 30 to 40
minutes. Use cake tester. Cool 13 minutes and remove from pan. Cool
completely and frost as desired.

Funnel Cakes
4 c milk
4 eggs
1/2 t soda dissolved in a little warm water
2 T sugar
1/4 t salt
4 c sifted flour, approximately
Flour enough to form a batter that will run slowly through a funnel
into hot fat. (Yes, that's the way the recipe reads!) I've made this
and I start with 3 c and add until thick enough to run slowly
through a funnel. Remember that batter will firm up upon standing.

Hi Nancy:
In answer to her question on the newsletter of March 7th, she should
search "recipe for gtexpress 101" and
will come up with many pages she can print and save and go over it
for future meal reference.
These same recipes can be used in the omelet
maker. I use mine often and many of my friends just took my
advice and bought one. They love the chocolate cakes they can make
for the grandkids. One friend also told me she makes the cinnamon
buns from Pillsbury that you buy in the can and she makes them in
the omelet maker and doesn't have to turn her oven on.
I recently make a stuffed chicken breast with mozzarella and stove
top stuffing. It was so good. I think it cooked in about 10 or 15
minutes and was so delicious.

Hi family, this is Boots in Va. I am recovering from a heart attack
and triple by pass surgery. I do the pot lucks here in my community.
I purchased, thru Peapod, not able to get out to the stores yet,
little smokies. I was shocked when my
order came and I saw how small they were. I'd like some ideas on how
to prepare them for a pot luck. I thought they'd be big enough to
wrap a canned biscuit around and bake. Thanks, Boots in Va.

Chocolate Bundt Cake
1 cup salad dressing or mayonnaise(do not use light or fat-free)
1 cup water
2 tsp vanilla extract
2 cups all-purpose flour
1 cup sugar
2 T baking cocoa
2 tsp baking soda
1/4 tsp salt
confectioners' sugar(opt)
In a mixing bowl, combine salad dressing, water & vanilla. Combine
the flour, sugar, cocoa, baking soda and salt. Add to salad dressing
mixture and beat until mixed. Transfer to a greased & floured 10
inch fluted tub pan(pan will not be full). Bake at 350 degrees for
35-40 minutes, or until a toothpick inserted near center comes out
clean. Cool for 10 minutes. Remove from pan to a wire rack. Dust
with confectioners' sugar once cooled if desired.
(I have made this with generic mayo and it has turned out great!)

Hearty Chicken & Noodle
Casserole
From: Campbell's Kitchen
Serves: 4
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup
1/2 cup milk
1/4 tsp. ground black pepper
1 cup frozen peas
2 cups cubed cooked chicken – I used 4 skinless boneless chicken
tenders, pan fried
2 cups medium egg noodles uncooked
1/4 cup grated Parmesan cheese
1/2 cup shredded Cheddar cheese (about 2 ounces)
Stir the soup, milk, black pepper, vegetables, chicken, noodles and
Parmesan cheese in a 1 1/2-quart casserole dish. Bake at 400°F. for
25 minutes or until the vegetables are tender. Stir the chicken
mixture. Top with the Cheddar cheese. Posted in the 10/11/2008

Rolled Oat Clusters No
Bake Cookies
2 c. sugar
1/2 c. milk
1/2 c. butter
1/2 tsp. salt
1 tsp. vanilla
1 c. peanut butter
3 c. rolled oats (quick or regular)
Combine sugar, milk, butter and salt, in a heavy 3 quart pot. Stir.
Bring to a full boil. Boil for 1 minute. Remove from heat. Add
vanilla and peanut butter. Stir until smooth. Add rolled oats. Mix
well. Cool until mixture holds shape, slightly. Drop by teaspoon
onto waxed paper. Cool. Makes about 4 dozen clusters. Linda NM in

message board some time ago. It is very good!
Pineapple Cream
Cheese Salad
1 small box lime gelatin
3 ounces cream cheese
2 cups boiling water (use drained pineapple juice
plus water for total amount)
2 cups miniature marshmallows
1 cup crushed pineapple, drained
1 pint whipping cream, whipped, or nondairy topping*
Combine gelatin, cream cheese, water and marshmallows. Beat at
medium speed until melted. Cool. Add pineapple. Refrigerate until
mixture jells. Fold in whipped cream or topping. *I used 1 package
of Dream Whip, prepared.

Is this the hair removal pad? If it is, click your remote to the
next channel or grab your sandpaper and try to remove hair. Silly
me, what was I thinking. They sell this at CVS now; it does not
remove hair but DOES remove skin. I brought it back and got a
refund.

anything. Want to know Does It Work? I check to see if new
gadgets work (or not) by looking at several sites. The sites
often differ in their testing of the products. It is also helpful if
the site has a demonstration of the product.

Mar. 7 Newsletter to Judy in Alaska regarding St. Patrick's Day
desserts.
Cool and Easy Pie
2/3 c. boiling water
1 pkg. (4 serving size) Jello Gelatin (Lime) Can use sugar free
Ice Cubes
1/2 c. cold water
1 8 oz. Cool Whip (thawed) Can use Lite
6 oz. Graham Cracker Pie Crust (can use reduced fat)
Stir boiling water into dry gelatin in large bowl at least 2 minutes
or until completely dissolved. Add enough ice cubes to cold water to
measure 1 cup. Add to gelatin; stir until slightly thickened. Remove
and discard any unmelted ice.
Gently stir in whipped topping with wire whisk until well blended.
Refrigerate for 15 to 20 minutes or until mixture is very thick and
will mound. Spoon into crust.
Refrigerate 4 hours or overnight until firm.
Makes 8 servings. When serving, top each piece with a dollop of
thawed Cool Whip.
I got this recipe from my sister; not sure where it came from, but
it's really good. Can use other flavors of gelatin also.

Here's a good recipe for lent, as a matter of fact this is good
anytime over toast.
Seafood Imperial
1/3 cup butter
1/3 cup sifted flour
1½ teaspoons salt
1/2 teaspoon paprika
3 cups milk
1 small can mushrooms
1/2 teaspoon Worcestershire Sauce
2 cups lobster or tuna (I use lobster meat)
1/2 cup pimiento
1/4 cup diced parsley
Melt butter and add flour, salt and paprika. Cook gently a few
minutes then add milk and Worcestershire Sauce. Cook until smooth
and thick and then add other ingredients. Serve on toast or patty
shells.

Potato Biscuits
1 cup mashed potatoes
2 cups flour
1 cup buttermilk
2 tsp. baking powder
1 tbs. butter
1 tbs. Honey
1/2 tsp. baking soda
1 tbs. brown sugar
Mix ingredients and roll out on wax paper approx. 3/4 inch thick.
Cut biscuits and bake at 400° until golden brown.

No Bake Peanut Butter
Cookies
2 cups granulated sugar
1/4 cup butter
1/2 cup milk
3 cups old fashioned oatmeal
3/4 cup smooth peanut butter*
1 teaspoon vanilla
Bring sugar, butter, and milk to a full boil, remove from heat, add
oatmeal. Stir. Then add vanilla and peanut butter. Stir. Drop by
teaspoonfuls on to waxed paper. When cool, pack in single layer in
Tupperware or other air-tight container to store.

Spicy Pickled Eggs
Spicy Pickled Eggs
1 (2 quart) jar with lid
1-1/2 to 2 dozen large eggs, hard boiled and peeled
1/2 medium size onion, sliced thin
1 to 2 fresh red Fresno chilies
1 to 2 green Serrano chilies
Fresh Dill sprigs (I used about 3)
Cool completely and then layer and arrange in the jar all of the
above.
Sauce:
3 cups white vinegar
1 cup water
1 whole garlic clove
1 tablespoon pickling spice
1 tablespoon pickling salt
1/4 cup sugar
Bring sauce to a boil and simmer on low for 10 minutes. Cool
completely and chill in refrigerator before pouring over egg mixture
in jar. Refrigerate for 2 to 3 days before serving.

This was my mom's recipes for Pickled Eggs
Overnight Pickled Eggs
3 cups vinegar
1 tsp. Whole peppercorns
1 ½ cups water
½ tsp. Celery seed
1 ½ tsp. Salt
12 eggs, hard cooked and peeled
1 tsp. Whole cloves
onion rings (opt)
abt 18 peeled eggs
Combine in a large pan, vinegar, water, salt, cloves, peppers and
celery seed. Boil for 10 minutes. Strain and cool. Pack eggs into
jars, alternately with onion rings; pour vinegar mixture over and
seal jars. Seal and store jars in refrigerator.
Note These can be eaten the next day but better is sat 3-4 days.

Ditto didn't set off the alarm once while I was gone. It seems
every time I leave for more than an hour or two Ditto sets off the
alarm. At first several times it was difficult to figure out
how and what he was doing to set off the alarm. Each time a
roll around kitchen chair was next to the counter in the kitchen.
Ditto is not allowed to get up on the kitchen counter so he is
rolling the chair over to the counter, climbing up in the chair and
reaching for what he wants without climbing on the counter.
Ditto pushing rolling chair together were setting off the alarm.
Yesterday, I put the rolling chairs between the wall and the table.
The alarm didn't go off and nothing was gone from the kitchen
counter. Before he would take spoons, fork, and anything small
enough remove from the counter. About a week ago Ditto was
guilty of putting several teaspoons spoons and measuring spoons,
pens, paper, and a dish sponge under the edge his pallet in the hall
linen closet. One day he had a roll of toliet paper with
little kitty teeth marks in his linen closet bed and was using it as
a pillow.

Mashed Potato Frittata
8 eggs
3 cups mashed potatoes
2 bell peppers, chopped fine
1 cup onion, chopped fine
1-1/2 cups mushroom slices
1/2 cup Parmesan cheese
4 tbsp oil
Preheat oven to 325 degrees. In a large, oven-safe skillet over
medium-low heat, sauté vegetables in 2 tbsp oil (I prefer butter)
until crisp-tender, stirring often. In a large bowl, whisk together
potatoes, eggs and cheese. Stir in vegetables. In the same large
skillet, heat remaining oil over medium heat. Cook frittata on
stovetop only until bottom is set. Carefully transfer skillet (you
may wish to wrap handle with aluminum foil) to oven and bake for
about 20 minutes or until the frittata is fully set. Cut in wedges
to serve. Serves six.

Hi Nancy,
Trish in the March 7th newsletter was looking for a peanut butter no
bake cookie with out chocolate. Here is one I have made several
times. I've always doubled it, with good results
No Bake Peanut Oatmeal
Cookies
1 cup sugar
1/4 cup butter
1/3 cup evaporated milk
1 cup peanut butter
1/2 tsp vanilla
1 cup oats (not instant)
1/2 cup chopped peanuts, if desired
Mix sugar, butter and evaporated milk in saucepan. Stir over medium
het. Bring to full rolling boil. Boil 3 minutes, stirring
frequently. Remove from heat. Stir in peanut butter, vanilla and
oats. Mix well. Add peanuts. Drop by tablespoonfuls onto wax paper (
I use parchment paper). Let stand until set. The recipe says it
makes 2 1/2 doz, but I usually only get a dozen from this. I make
mine larger.

FFor Florence in IN, During Lent I will make my
stuffed green peppers using my favorite
salmon patty recipe. I mix up the salmon mix and just stuff
and cook like I would any stuffed green pepper recipe. I also use my
crock pot to make stuffed peppers. I put about 1 inch of water in
the bottom of the crock and I just turn it on and let it cook on low
for 8 hours.

7-Up
Biscuits
1/4 cup 7-Up
1/4 cup Buttermilk
2 cup Bisquick
Mix together 7 up, buttermilk, Bisquick to smooth dough. Dip hand
into just enough more Bisquick you can knead dough in bowl till
smooth and elastic. Shape dough into 6 patties of equal size, 1"
thick & place 1 patty in center of a greased 9" round layer pan.
Arrange the other patties around that. Wipe tops of each in a dab of
margarine or margarine. Bake at 450F (very hot oven) 18 to 20
minutes or till triple in size & golden brown. Cool in pan 10
minutes before
serving. Makes 6 flakey biscuits.
