Hi Nancy, furbabies and all Nancylanders
First of all I would like to tell you how much I enjoy the newsletter and let you know your hard work is very much appreciated. I look forward to the newsletter each day and have withdrawal on Fridays...LOL.

I am looking for some menu ideas for a summer meal. We are going to deep fry a turkey and I am not coming up with good ideas for my salads and sides any suggestions for easy summery foods would be greatly appreciated.

The Reduced Sugar cake mixes are Pillsbury and I get them at Walmart, Giant, Weis and a local grocery store called Nell?s Shur Fine. The shelves are sometimes empty (must be very popular) and I think they taste better than the regular cake mixes?.

Hello Nancy and friends! I am looking for a recipe for a breakfast dish that a co-worker shared with me some years ago.

She was from New York and said that it was a popular dish there. She has moved away from SC and I no longer know how to get in touch with her, but hoping one of the wonderful cooks out there will know what I am talking about. Some of the ingredients were rice, peppers, onion and eggs and maybe cheese. The only spice I remember it having was thyme. The eggs appeared to be scrambled into the other ingredients.

I have some ideas for the "new" Grandma T. If you want to be a "Super Star" with your grandchildren, plan special times with them. I would suggest a tea party. You don't have to have tea, you can even use just water, apple juice or any beverage, as long as you get out the tea cups and teapot to serve from. Kids love to play at being grown up and use real things. It is a great time to teach table manners. I always tell my grand kids that we will be having a tea party, so bring your manners with you. Then I get then involved in making it. We make grilled cheese sandwiches that were cut with a butterfly cookie cutter. Use a good bread made for paninies. My kids love my garlic bread, so I used a little garlic powder in some butter to spread on the outside of the sandwiches. They loved using the cookie cutters and attaching toothpicks with green grapes on the ends for the antennas. We made a sweetened cream cheese that we stuffed into strawberries. The kids took the tops off the strawberries and washed them. Then the older one was able to make the cream cheese mixture and stuff. The younger ones, cut different small shapes of cheese from Colby-Jack slices. They put them on crackers. We also made cupcakes and I just bought some canned vanilla and chocolate frosting for them to cover the cupcakes. Then I bought the icing in a tube for them to decorate. They sell plastic decorator tips that fit right onto the tubes. We had so much fun making things and it took us all morning. I try to have a theme for each meal we make and read a book to them that goes along with it, if possible. We have gotten so involved in our tea party planning that we even dress in costume or wear silly hats. We all wore head bands with flower peddles on them when we had our garden party. Kids will be better eaters if they are involved in the process.

Also kids love doing art work of any kind. My kids love to paint, so I often just buy up some unfinished wooden things from the craft store and let them paint. We have painted treasure boxes, nesting ladies, birdhouses and toy cars. You can just keep it simple by purchasing some foam stickers from the Dollar Store and have them make a picture. My kids love to use stencils and ink stamps. You don't even have to use ink if you are worried about clothing. We rub waterproof markers on the stamps, before applying to the paper. Have a supply of child proof scissors or the fancy edgers, crayons, water paints, markers, colored pencils, glue sticks, paper punches, stencils, scotch tape, stapler, glitter glue, etc. Also, go through junk mail and keep any stickers. Kids love them. Used greeting cards make great collages and are also good for the little ones to practice their cutting. I make strips of cards easy for them to handle. It is too hard for the real little ones to cut paper. Speaking of paper, I don't through anything out. Used wrapping paper is great for decoupage. You would be surprised at what you can do with junk you think there is no use for. My grand kids also loved to make placemats. We make them for every holiday or season. We use the bright poster board that comes in the perfect size for placemats. They can decorate them anyway they wish. We usually use holiday stamps in different colors, and paper they punched out in various shapes. They use the glitter glue, too. When all is dry, we take them to CopyWorks and have them laminated. They are so pleased with themselves. You can also buy some canvas bags that are very inexpensive or aprons for your cooking projects. Get some fabric paint and allow them to design their own. I wish I could think of all the things we have done over the years to pass it onto you, but I think I have a good start for you. My grandchildren live 3 hours away, so we only get together about once every month to month and a half. I want them remembering me, so I plan lots of memories for us to share.

Maxine from Kansas has it right. Haluski are the homemade drop dumplings you mix into the cabbage. Store bought egg noodles don't qualify. My grandmother and mother made a Haluski that had grated potato instead of the eggs to go with the cabbage and the one's with egg were used in soup. I have carried on the tradition and love them although I can't make them as small as they did.

Hi new grandma! Sandwiches are great for kids this age, let them help you make them. Grilled cheese, PB and J, tuna are some favorites, maybe with some veggies and dip ( kids love to dip ) --easy for you, fun for them, no oven necessary! Make some english muffin or pita pizzas, also fun for the kids to make their own, migh need the broiler or a toaster oven for those. As for keeping them busy .... paper and crayons .... play doh .... books .... I'm sure someone has a rcipe for make your own play doh here, or you can find one online!..... get them outdoors with a ball, a small inflatable pool, etc...... dollar stores have tons of stuff cheap, everything from outdoor toys and jump ropes, etc, to stickers and books...my 4 yr old likes to make pictures on paper with stickers, keeps her busy for hours....little girls like to play dress up, maybe a box of your old clothes, shoes, accessories? On a hot day, let them wash your car, porch, driveway, etc....:)... have them help you with things in the house ( dusting, folding laudry, etc ) - kids love to help! Hope this helps you out.

Nancy, I would like to freeze fresh peaches this year. Hoping one of the readers can help me. Is there anything else I need to do other than peel, slice, and put in freezer bags? A friend mentioned sugar, but I am not sure. Thanks a lot. Also would like to thank all the ladies that sent in to me how to keep my sheers from wrinkling when washed. I got that done, and they are so pretty.

Thank you to everyone that has given me meal ideas for my young grandchildren. I never married until late in life and it never occurred to me I would have instant grandchildren when I married. It was a pleasant shock to my system.

Vegetable Jell-O Salad
3 oz. pkg. lemon Jell-O
1 c. boiling water
3 tbsp. sugar
1 c. cold water
2 tbsp. vinegar
1 tsp. salt
1 c. grated raw carrots
1 c. shredded raw cabbage

Prepare Jello in boiling water and stir in sugar. Add cold water, vinegar and salt. Chill; when slightly thickened fold in carrots and cabbage. Chill until firm.

Carrot Jell-O Salad
1 (6 oz.) pkg. orange Jell-O
2 c. boiling water
1 1/2 c. cold water
2 lg. carrots, shredded
1 (11 oz.) can mandarin oranges,
drained
1 can crushed pineapple, undrained
1/2 c. chopped nuts

Dissolve gelatin in boiling water and stir in cold water; chill until partially set. Fold carrots, oranges, and pineapple and chopped pecans into Jello. Garnish with carrot curls and pecan halves.

Love your site I have 2 questions
How much is a stick of butter?? 1 cup or 1/2 cup here it is sold in pounds not sticks How many cups are there in a #10 can of ketchup. If I could get an answer to these that would be great !!

Easy Sugarfree Rhubarb Pie

1 graham pie crust
3 c. green or red rhubarb
1 lrg pkg.. sugar free strawberry Jell-O
1-1/2 c. milk
1 sm.pkg. sugar free instant vanilla pudding

Microwave the rhubarb 6-8 minutes on high, Stir every 2 minutes. Stir in Jell-O until dissolved- cool completely.

Combine pudding and milk- beat on low speed for 2 minutes. Fold into rhubarb mixture. Spoon into pie crust. Cover and refrigerate till firm..

Add red food coloring if you want it red instead of pink.

Mixed Vegetable Salad
1 (14-15 ounce) can cut green beans
1 sm. (12 oz.) can whole kernel corn
1 c. English peas

Drain all thoroughly.
Add: 1/2 c. chopped onions
1/3 c. chopped green peppers or celery
2 pimentos, chopped (1 sm. can)
1/2 c. sugar
2/3 c. vinegar
1/4 to 1/3 c. salad oil
1 tsp. salt

Do NOT heat. Pour over vegetables. Let stand at least 12 hours. Taste the liquid after it stands for about 12 hours and add vinegar or sugar to suit taste. Will keep for Several days.

Marinated Vegetable Salad
3 c. carrots, sliced diagonally
1 c. chopped celery
1/2 c. chopped green and/or red pepper
1 med. onion, thinly sliced
1 tsp. celery seeds
1/2 c. reduced calorie Italian salad dressing
1/4 c. vinegar
1/4 c. water
Sugar substitute to equal 1 c. sugar

Place carrots in small saucepan; cover with water and boil about 10 minutes or until crisp-tender; drain well. Place carrots, celery, green pepper, onion and celery seeds in large shallow dish; toss lightly and set aside. Combine remaining ingredients in small saucepan, mixing well; bring to a boil, stirring often. Pour sauce mixture over vegetables. Cover and chill overnight.

Pasta Salad with Vegetables
1 c. dry corkscrew macaroni
1 c. fresh broccoli flowerets
1 c. sliced zucchini
1 c. chopped seed tomato
2 tbsp. diced Vidalia onion
1/3 c. oil-free Italian salad dressing
2 tbsp. Parmesan cheese
1/4 c. sliced radishes
2 c. torn lettuce

Cook macaroni according to package directions. Drain and rinse with cold water. In large mixing bowl, combine macaroni, broccoli, zucchini, tomato and onion. Add salad dressing, toss to coat. Sprinkle with Parmesan cheese. Cover and chill for 2 to 24 hours. To serve, stir sliced radishes into the macaroni mixture. Serve over torn lettuce.

Deviled Eggs
6 eggs
1/2 c. salad dressing
1 tbsp. mustard
2 tbsp. pickle relish
1/2 tsp. onion or garlic salt

Boil eggs and peel. Slice long way, take out yolks and mix with salad dressing, mustard, pickle relish and onion or garlic salt. Mix and spoon back into egg halves and sprinkle with paprika.

Easy Corn Dogs

1 c. pancake mix
2 tbsp. cornmeal
1 tbsp. sugar
2/3 c. water

Mix well. Dip hot dogs into mixture and fry until brown.

1/4 c. corn syrup
1/4 c. peanut butter
3 c. Rice Krispies

Mix and form into balls.

Drumsticks

1/2 c. all-purpose flour
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
6 chicken drumsticks
1/4 c. margarine or butter, melted and cooled

Heat the oven to 425 degrees. Mix flour, salt, paprika and pepper in a bowl. Dip chicken drumsticks into margarine; roll in flour mixture to coat. Arrange in an ungreased square pan, 8x8x2 inches. Bake uncovered until done, about 50 minutes. Makes 6 drumsticks.

Stuffed Celery

1 (8 oz.) pkg. cream cheese
1 (1 oz.) env. dry onion soup mix
Celery, cut into approximately 3 inch pieces

Thoroughly mix together cream cheese and onion soup. Spread on celery and serve.

Popsicles

1 pkg. Jell-O (unsweetened)
1 pkg. Kool-Aid (unsweetened, same flavor as Jello)
1 c. sugar
2 c. water, boiling
2 c. cold water

Mix all and pour into popsicle holders; freeze overnight. Yield: Makes approximately 12-15 popsicles.

Play Dough for Kids

1  c. flour
1 c. water
2 tsp. cream of tartar
1/2 c. salt
1 tbsp. vegetable oil

Mix all ingredients together and cook over medium heat, stirring constantly until it forms a ball. Pour out; let cool slightly and knead well.

Finger Paint

3 tbsp. sugar
1/2 c. cornstarch
2 c. cold water
Food coloring (variety of colors)
Liquid dishsoap
Med. sized saucepan
Muffin tin or 4 to 5 sm. cups

Mix sugar and cornstarch in saucepan over low heat. Add water, continue stirring until mixture is thick. Remove from heat. Spoon into sections of muffin tin or cups. Add a drop or two of food coloring (a different color for each cup) and a drop of dishsoap to each portion. Stir and let cool. May be stored, covered, in an airtight container.

Sidewalk Chalk
1/4 c. plaster of paris
2 tbsp. water
Liquid Tempera paints (enough to color brightly)

Mix all ingredients, pour into small 3 1/2 ounce Dixie cup. When mixture hardens (about 30 minutes), peel off paper cup. Makes 1 large chunk of chalk; washes off sidewalk with water. Makes 1 cup chalk.

Peanut Butter Play Dough
1-1/2 c. peanut butter
3/4 c. powdered milk
3 tbsp. honey

Mix all ingredients together. Form playdough into shapes. After you play with it. Eat it!

Make Animals with an Apple

Half an apple
1 big marshmallow
4 carrot circles
3 mini marshmallows
3 M&M's
5 toothpicks

Push a toothpick into the apple and cut 4 carrot circles for feet and push toothpicks into them. Push the toothpicks into the bottom of the apple. Glue on mini-marshmallows for ears and muzzle with peanut butter. Glue on M&M's for eyes and nose with peanut butter.

Avocado Dressing for Vegetable Salad
2 avocados, peeled & mashed
1 c. sour cream
1/2 tsp. salt
1/2 cherice
1/8 tsp. onions
1/8 tsp. Tabasco
4 tsp. lemon juice

Combine all ingredients and chill. Makes 3 cups.

Cucumber Jell-O Salad
2 packages lime gelatin dessert
2 cups crushed pineapple
pineapple juice and very hot water to make 2 cups
1 cup cold water
1 1/2 cups grated cucumber
1 teaspoon lemon juice

Drain pineapple and cucumber well. Make gelatin dessert according to package recipe. Cool to consistency of egg white. Fold in pineapple, cucumber and lemon juice. Pour into mold and refrigerate. Unmold and serve on crisp lettuce with mayonnaise.

Chicken Noodle Soup Jell-O Salad Dip
1 cup boiling water
2 packages sugar free, lemon Jell-O
2 cans chicken noodle soup
2 cups chicken, shredded or 2 cans, drained
1 cup mayonnaise
2 cups Cool Whip
1/4 cup onion, chopped
1/2 cup bell pepper, chopped
1 cup celery, chopped

Dissolve Jello in water. Let cool slightly. Add all other ingredients except mayonnaise and Cool Whip. Fold in mayonnaise and Cool Whip last. Pour in 9 x 13 inch dish. Refrigerate. Serve with crackers like a dip.

Jell-O Sliced Peaches
1 16 ounce can sliced peaches
1/4 cup vinegar
1/2 cup sugar
12 whole cloves
1/8 teaspoon cinnamon
1 3 ounce package peach Jell-O
3/4 cup cold water

Drain peaches, measuring 3/4 cup syrup. Chop peaches coarsely. Bring syrup, vinegar, sugar and spices slowly to a boil. Add peaches, simmer for 10 minutes. Strain syrup and discard cloves. Add enough peach juice or water to make 1 cup. Dissolve Jello in hot syrup. Add cold water; if I have enough peach syrup, use that and peaches. Cool, then pour into mold. Chill until set.

Blackberry Jell-O Salad
1 large package blackberry Jell-O
2 cups boiling water
1 15 ounce can blackberries
1 large can crushed pineapple, undrained

Top with the following after congealed:
1 8 ounce tub sour cream
1/2 cup sugar
1 8 ounce package cream cheese, softened
1/2 teaspoon of vanilla

Dissolve Jello in water. Add pineapple and blackberries. Pour in dish. Congeal. Top with above ingredients. Sprinkle with nuts. Use juice from blackberries and mix with the water to make the 2 cups liquid.

Applesauce Red Hots Jell-O Salad
6 ounce package cherry Jell-O
5 ounces red hots
apples
1/2 cup chopped pecans

Dissolve Jello and red hots in boiling water. Cool. Cut apples in small pieces. Add pecans and apples. Chill until set.

Mandarin Orange Jello Salad
2 small boxes or 1 large box orange flavored gelatin
6 cups water
2 small boxes tapioca pudding
2 small boxes vanilla pudding
3 small cans Mandarin oranges, drained
1 large container Cool Whip

Heat six cups of water with gelatin, tapioca and vanilla pudding together. Let this come to a rolling boil. Stop. Let mixture cool 2 hours. Fold in Mandarin oranges and then Cool Whip. Mix well. Refrigerate. Serve. Serves 6 to 10.

Fluffy Pumpkin Casserole
1 (29 oz.) can solid pack pumpkin
1/3 c. brown sugar
5 tbsp. margarine, melted
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ground ginger
3 eggs, well beaten
1/2 c. cream or milk
2 tbsp. honey
1/2 c. walnuts, chopped

Mix pumpkin, sugar, margarine, salt, and spices in large bowl. Add eggs and cream; mix thoroughly. Spoon mixture into casserole dish. Drizzle honey on top. Sprinkle with walnuts. Bake at 375 degrees in preheated oven for 50 minutes or until slightly puffed. Serve at once.

Last weekend my husband brought home a bag of organic apricots that someone gave him. I google searched fresh apricot recipes, and saw pie, bread or preserves. Being a waste not person, I decided to make preserves. I looked at three recipes, and made my own recipe. They really turned out good!!

Apricot Preserves
2 lb apricots
1 cup sugar (I used less)
1 cup water.

Wash and remove the pits from the apricots. I chopped them in my food processor, but be careful not to make mush of them. Dissolve the sugar in the water in the microwave or in a saucepan. Put apricots, sugar, and water in crockpot. Cook 2 hours with the lid on - then 2 hours with the lid off. Stir occasionally.

One recipe said to do the following, and I did. Take 5 05 6 of the pits and crush with a hammer of nut cracker. Tie in cheesecloth and put in preserve mixture. I didn't have cheesecloth, so I used a tea strainer.

I think it did add to the taste. Homemade preserves have a more intense flavor than store purchased. I have one jar in the fridge, and 2 in the freezer. The taste is fabulous!
