Here is a cucumber recipe for Sue, who is looking for tried and true recipes.

Cold Cucumber Soup
4 cucumbers, peeled, halved, and seeded
1 cup sour cream
1 Tbs minced fresh dill
1 1/2 tsp sugar
1 tsp Dijon mustard
1 clove garlic , minced
3 cups buttermilk
salt and ground black pepper
Cut 1 cucumber into 1/4-inch cubes, and reserve. Process remaining 3 cucumbers,
sour cream, dill, sugar, mustard, and garlic in a blender or food processor,
until
smooth. Transfer to a large bowl or container.
Stir in buttermilk and reserved cubed cucumber. Season with salt and pepper.
Cover and refrigerate until well chilled, about 30 minutes, or up to 6 hours.
Season again with salt and pepper, to taste, before serving.
Adding a lb. of small cooked shrimp makes this soup a perfect main course for a
luncheon or light summer dinner. This soup should be eaten the same day it is
made.

Good afternoon Nancy!
Since it is cool and wet here, I decided to make my vegetable beef soup. I
combined several different recipes to get it. I have also won several awards for
it. It smells good even now and has only been on the stove about ? hour or so.
After it gets really heated up I will put it in the crock pot to finish.
Chris?s Vegetable Beef Soup T & T
1 lb. ground beef
1 lg. onion - chopped
2 to 4 celery sticks ? chopped
Brown in 5 qt. Dutch oven the 3 ingredients well in 3 tbl. olive oil. Drain and
rinse ? to get grease out.
Add back to pan. Add:
1 15 oz. can petite diced tomatoes, undrained
1 can diced potatoes, drained
1 tsp. crushed garlic OR 1 clove garlic, crushed
1 14 oz. pkg. frozen carrots, peas, corn & green beans
5 c. beef broth or equivalent
2 small handfuls farfalle or bow tie pasta (optional)
Simmer all ingredients till heated through and pasta, if added, is done. Serve.
This is very good! Think I may make some corn bread to have with this tonight.

a google search of Sam's Club and they sell a 40 oz bottle there.. you will have
to do a search for your state as to price as it varies state to state. good luck

This is in response to Linda NM's question about the meatballs demonstrated with
a chipotle sauce. We must have had the same product demonstrated in various
parts of the USA since I tried it at Sam's Club....it was delicious. Anyway, the
sauce is "Roasted Raspberry Chipotle Sauce" made by Fischer & Wieser. The are
located in Fredericksburg, TX. I was there last week but didn't know that was
where this was made. I serve the sauce over cream cheese also with
crackers....heavenly! If you are able to find it try the recipe for Pork
Tenderloin that is on the jar. WOW!

Just got back from vacation in the Outer Banks, N Carolina. Went to a Try My
Nuts store and tasted something called "White Trash" It was a snack mixture
covered in white chocolate. There was also one covered in dark chocolate and
white chocolate. Does anyone have a recipe for these?? Would love to be able to
make it at home, it was expensive to buy a small bag.

Malted Milk Ball Cake
1 Box white cake mix
1/2 c Chocolate malt powder (may Substitute Ovaltine)
1 c Chopped malted milk balls
ICING
2 c Fudge icing
1/4 c Chocolate malt powder
GARNISH with additional Malted Milk Balls
Make cake according to directions on the box, adding the malt powder at the same
time as the dry mix. When the batter has been placed into the greased cake
pans, sprinkle the chopped malted milk balls evenly over the batter. Bake
according to directions on the box. When the cake is cool, mix malt powder with
fudge icing and frost cake. Can garnish with additional milk balls

Babs in JAX? I would dearly love to try your Bailey's Bundt cake. Pillsbury has
taken a back seat here in Scotland. I will investigate your suggestions. I have
found an equivalent of the Pillsbury rolls and croissants at Aldis, I am very
impressed with the stocks and prices in our new Aldis.
Re missing the castor sugar - put the required quantity in your liquidiser or
food processor give it a few blasts and walla you have castor sugar.
Incidentally whilst we are on the subject stick a used, dried vanilla pod or two
in your cooking sugar container - it does make a big difference. I have been
using the same 2 pods for about 18 months, just keep topping up with fresh
sugar.
Chris re the pudding recipes I had hoped that someone would have found some
miraculous pudding mix to add to the cake mixes without having to make the
pudding and the cake. Asking a lot I know.
Doris in Indiana there is a slow cooker recipe on the crockpot
site message board sent in by Jay in July 2003 if you press the search at the
top of the crockpot board and type in Sausage/Rice you will go straight to it.

Homemade instant pudding
Q: My family and I really enjoy Jell-O pudding. I know there has to be a way to
make our own and save some money. Do you have a recipe for pudding? Thanks! -

A: We love pudding, too. Making it yourself does save money, especially if you
make a large batch of instant pudding, and make servings from that. Doing it
this way makes each serving cost 15 cents as opposed to 25 cents from a
store-bought mix. I have included four flavors of pudding recipes.
Vanilla Pudding Mix
Ingredients:
3 cups nonfat dry milk
4 cups sugar
1/2 teaspoon nutmeg
1 teaspoon salt
3 cups cornstarch
1/2 teaspoon vanilla extract
Mix all except the vanilla, and store in an airtight container. To prepare, mix
1/2 cup of mix to 2 cups milk. Heat and stir constantly while boiling. Cool,
then add 1/2 tsp. vanilla extract.
Chocolate Pudding Mix
2 1/2 cups nonfat dry milk
5 cups sugar
3 cups cornstarch
1 teaspoon salt
2 1/2 cups unsweetened cocoa
Mix and store in airtight container. To prepare, add 2/3 cup mix to 2 cups milk.
Heat and stir constantly while boiling. Cool, then serve.
Coconut Cream Pudding Mix
3 cups nonfat dry milk
4 cups sugar
1 teaspoon salt
3 cups cornstarch
1 1/2 cups shredded unsweetened coconut
1 teaspoon coconut extract
Mix the extract and the shredded coconut in a small bowl until the extract is
absorbed. Add the coconut to the other ingredients and store in airtight
container. To prepare, add 2/3 cup mix to 2 cups milk. Heat and stir constantly
while boiling. Cool, then serve.
Butterscotch Pudding Mix
Ingredients:
2 cups nonfat dry milk
5 cups brown sugar, packed
1 teaspoon salt
3 cups cornstarch
Mix and store in airtight container. To prepare, add 1/2 cup mix to 2 cups milk.
Heat and stir constantly while boiling. Cool, then serve.

To all looking for Spatini Spaghetti Sauce Mix... this is a
clone I found a while ago. I have not tasted Spatini sauce so I have no idea if
it is close or not, but I do like the sauce.
Spatini Spaghetti Sauce Mix
This is made from all dried seasonings and flakes.
1 T. instant minced onion
1 T. cornstarch
1-1/2 t. salt
1 T. sugar
1 T. parsley flakes
2 t. green pepper flakes
1 t. celery flakes
1/4 t. minced instant garlic
1/2 t. oregano
1/4 t. Italian seasoning
Combine all the seasonings and flakes, then add
6oz can tomato paste
8oz can tomato sauce
2 cups of water
stir together until hot then simmer for 30 minutes
You may add 1/2 pound of cooked hamburg or cooked sausage
I usually just line up baggies and make several packages at a time then all I
need to do is take one package and add the tomato products and meat.
Hope one of you will try it and let me know if it is close to the original mix.

Sharon in Indiana... I have never made the Sausage and Rice casserole
in a crockpot but I imagine you could do it. I would brown the meat, onion and
celery first then add all the rest of the ingredients to the crock pot. I would
say cook on low 6-8 hours. You might have to add some chicken broth so the rice
gets done. I would check on that at some point. If you try this in the crock
would you let me know how it turns out?

Sue, regarding cucumber recipes my favorite is not a recipe. I just made it up
and it's my favorite. I've "discovered" the English cucumber (seedless) and it's
my new favorite. Cut off the ends and peel in a striped pattern, in other words
the cuke will look striped when you peel it.
Slice the cuke and add onions in rings and place some zesty Italian dressing
over the mixture and place in the fridge to chill well. Enjoy. It's my favorite
cuke dish,

I have a question for Violet in the 7/26 newsletter ? what are bacon
lardoons? In your recipe for Short Rib Bourguignon, which sounds
wonderful, by the way, I was wondering what they are. Do you mean bacon strips?

And for Sylvia in the same newsletter, I got to thinking about your statement
about not making up the pudding mix, but just adding it to your cake mix. Maybe
you could; the liquid called for might have to be added, and then subtract the
liquid for the cake. Hope I am making sense. It is still early in the morning
here! LOL. Try it with a small amount anyway and see how it works!

This is for Sue who is looking for recipes using cucumbers.
My niece makes this all the time and we love it. She got it from a friend at
college who came from the Middle East. it's simple and delicious.

Chop up cucumbers, red onion and Roma tomatoes, salt and pepper them and squeeze
a fresh lemon or two over it. My sister in law adds chopped bell pepper, but my
niece and prefer it the original way.
Pumpkin Cake
4 eggs
1 1/4 c. sugar
1 lrg can evaporated milk
3 t. cinnamon
1 sm. can dark pumpkin (for pies)
1 pkg. yellow cake mix
1 stick margarine, melted
1 c. nuts, chopped
Mix together eggs, sugar, milk, cinnamon and pour into a greased 13" x 9" pan.
Sprinkle over top of this layer: cake mix, margarine, melted; nuts. Bake one
hour at 350 degrees. Serve plain or with cool whip.

Thank you Nancy for the return of the recipes in the large print. I noticed the
several small print recipes were when they were from a previous printed
newsletter. Before I killed my old printer, I could adjust the print. This new
one is a hassle to adjust(?) anything. It is either or. So thank you Nancy for
the trouble you went to. I hope I didn't cause you too much extra work. Is your
hands better now?As smart as your kitties are, I'm surprised they haven't helped
out with the typing! I love cats!! Tickle their tummies and give them a good ear
rubbing for me.
