I want to Thank all those kind people who sent in the sugar free brownie recipes for me. I will try each one to see if I get the right results I'm looking for. For the gal that sent information about Clabbergirl sugar free, I'm going to look for it at all the stores here in Las Vegas. I think that is what I'm really going to do since i am diabetic.

My daughter brought home a pint of crab salad she got at Wal-Mart's deli, it was so good. Do any of you great cooks have a recipe for it? It didn't have any lettuce in it, just some other ingredients mixed with a sweet mayonnaise dressing. only had one bite of it, so couldn't really tell what was in it.
Hope someone can help me out.

I have a comment about cake mix cookies:

I use a box of mix in whatever flavor, 1/3 c. oil, and 2 eggs. As a Weight Watcher who likes to substitute, trial and error has shown me that in this instance using all applesauce, baby food prunes, sour cream, or whatever you use produces a strange consistency that tends to spread, harden, and burn easily. I have found that estimating half and half oil and substituting works, but you have to eye the amounts closely. I have never seen a 1/6 cup measuring cup before...haha!! Anyway, a good combination to try is dark chocolate cake mix and Andes mint chips (found in chocolate chip section)..they taste like Thin Mints. Anything with butterscotch is also good, as well as cherry chip mix with cherry chocolate chips, although they can be really hard to find. Our favorite is Snickerdoodles...yellow cake mix, 1/3 c. oil, 2 eggs. Roll into balls and then roll in a cinnamon/sugar blend. Press slightly with a spoon or fork, and bake at 350 degrees about 10 min. Oh, and a really important note.....Do NOT use the reduced sugar cake mixes...they do not work for cookies.

I got the information about the egg from a Woman's World Magazine. Since I cut it out, I don't have the date of the issue. Google "nutrition in eggs" and you will see how good they are for you.

I had some rhubarb left, and I saw this recipe so I made it. It is good.

Rhubarb Salad

3 cups diced rhubarb
1/2 cup sugar
2 pkg strawberry jello ( ( only had one pkg. so I only used one)
2 cups cold water. ( 1 used 1 ? cups)
2 cups finely chopped celery
1/4 cup lemon juice
a few chopped pecans

Combine rhubarb, sugar, and water in a saucepan. Cook until rhubarb is tender. Add and stir until dissolved. Cool. Add remaining ingredients, and pour into a bowl to chill until very thick.

I just use whatever I have. I prefer the green olives.


Nancy: Lisa in the Tuesday Recipes posted a method for Microwaving Corn On The Cob, which I've been doing for years only my method is even simpler. Get however many ears of fresh corn you need and soak them in cold or ice water for about 10 minutes (I place the ears standing up in a
5-gallon bucket then throw some ice over the ears and add enough cold water to cover the tops or bottoms of the ears - depending on how they are standing) THEN without doing anything more than draining the excess water from the ears, place them in the microwave on a double thickness of
paper towels and microwave on high for 3 to 5 minutes (depending on how many ears you're cooking), turn the ears 180? so that they cook on both sides and microwave for an additional 3 to 5 minutes. 3 minutes on each side for 3 or 4 ears and 5 minutes on each side for more than 4 ears -
and it's okay to double stack them if necessary.

Remove the microwaved ears, allow to cool slightly (enough so the ears can be handled and strip the husk and silk from each ear and serve immediately while still hot with butter or seasoned butter (butter and garlic powder and/or parsley, etc., salt and pepper or whatever seasonings you prefer. The silk will come off very easily. I also use this method to grill corn on the cob over the outside grill (barbecue) but the ears need to be turned more often on the outside grill. Grill until the husks are blackened and don't worry if some of the husks get so dry that they catch fire - won't
hurt the corn and the fire will quickly go out. Peel off the blackened husks and the silk will come off almost as easily as peeling a banana.

Serve hot or set aside and reheat in microwave just before serving with condiments as previously mentioned or to personal preferences.

Cake Mix Cookies

1 box Pecan Cake Mix (Betty Crocker)
1 cup Bisquick
2 sm boxes Instant vanilla pudding (dry)
2 cups mayonnaise
1 cup chopped nuts
1 bag chocolate chips

Mix cake mix, Bisquick and dry pudding together. Add the 2 cups mayonnaise. It's easier to mix this with clean hands. Then add the nuts and chips. Grease cookie sheets. 350 oven for 11-12 min.
Leave set on cookie sheets 1-2 min.

Cake Mix Cookies

1 cake mix
1/2 cup oil
2 eggs

Preheat oven to 350. Mix all above ingredients drop by spoonful onto your cookie sheet and bake 10 minutes.

Sometimes it does take a little longer if you have larger cookies.

I get 2 1/2 dozen out of one batch.

I have done a carrot cake mix adding nuts and raisins.

Today I made banana cake mix and added nuts. Took these to a sorority potluck and they went "bananas" (no pun intended) over them. Not one left to bring home.

Banana cookies are a fairly rare item. Soooo good tho. Try them.
My favorite!

I want to try spice cake mix with raisins and maybe chocolate cake mix with chocolate chips and nuts.

Let me know how you like them. They are a big hit around here.

I recently made a purchase of Light Butter, Great Value brand from Wal-Mart. I use this often. Had this pkg of 1 lb (4 quarters about 3 weeks and when I went to use a stick for baking noticed that it had turned completely white, looked like lard!! Has anyone ever had this happen or would you know why? I didn't use it.

This is for Sue who was requesting info on a 4-slice toaster. I would like to share with her that I just bought a toaster oven (not that big either) about 2 months ago. I went thru so many toaster ovens (because they were so cheaply made) and finally made the leap and bought a good one (more money of course). I never have to worry about it setting on fire, getting too hot, not cooking enough or cooking too much, etc.. I got the Cuisinart Toaster oven. Not only can I toast bread, but I can bake and broil.. I highly recommend this.

On May 26 a gal wanted to know the best way to clean her new stainless steel dish washer. Mix 1part white vinegar to 3 parts water put in a spray bottle , spray and wipe with soft cloth. I would use a microfiber cloth. We used this method to clean the stainless in the cafeteria at the Executive Building at Pontiac Motors years ago. We first whipped everything down with warm soapy (mild soap like dish soap) rinsed well then wiped and polished with the vinegar water. At home you probably wouldn't need soapy water every time. The vinegar cuts the grease from fingerprints.

Just got our Cooking for 2 magazine yesterday and found the most amazing recipe! I am going to make this one! Will let you all know how it turns out! Bet you could use most any flavor of ice cream, too!

Ice Cream Bread

Ice cream gets a whole new use in this tender bread recipe from Katherine Kuehlman of Greenville, South Carolina. ?I found this recipe and pared it down for two,? she writes. Be sure to use full-fat ice cream for best results.

1 cup butter pecan ice cream, softened
3/4 cup self-rising flour
1 tablespoon sugar

In a small bowl, combine the ice cream, flour and sugar. Transfer to a 5-3/4-in. x 3-in. x 2-in. loaf pan coated with cooking spray. Bake at 350? for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (6 slices). Cooking for 2 Magazine

Lemonade Sugar Cookies April 2008

1 cup sugar
1 cup butter
2 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
1 can (6 ounces) frozen lemonade concentrate, thawed
extra Sugar (not confectioners)

Cream sugar and butter. Add eggs and beat until light and fluffy. Sift flour and soda together. Add alternately with 1/2 cup lemonade concentrate. Drop by teaspoonfuls, 2 inches apart, onto an ungreased baking sheet. Bake in a preheated 400 degree oven for 8 minutes or until lightly browned edges. Brush hot cookies with remaining lemonade and sprinkle with sugar. Remove to wire rack to cool.

Chewy Lemon Cookies

1 box lemon cake mix
2 cups whipped topping (like Cool Whip) - I used the whole 8 oz. container
2 eggs
Powdered sugar - optional

Mix together cake mix, whipped topping, and eggs. Refrigerate 2 hours. Preheat oven to 350 degrees F. Lightly grease a cookie pan. Roll cookie dough into small balls, then roll balls in powdered sugar. Space balls evenly on cookie sheet. Bake 6-8 minutes. Remove from pan and cool. Makes 24 NOTE: I did not roll the cookies and only sprinkled a little bit of powdered sugar on top. I also just dropped the cookie dough on the cookie sheets. I then baked them for 10 - 14 min.

I would love to know if anyone out there has made this recipe, it is so different, I can't even think of anyone making it, I put the list of what to do with pickle juice in for the ladies, and think there were many good ideas, but this is really different, I would make it, but I know my husband wouldn't even put in is mouth. Well here it is

I thought about trying one in Mobile but couldn't...didn't sound good. The locals said they are huge in Mississippi though and best if soaked in any of the red flavors (Strawberry, Cherry, or Tropical Fruit Punch) with DILL Pickles only. I guess it's a real sweet and sour taste but I don't want to try it...ha ha!

Anyway's, he did give me 2 recipes that he knew of to bring back to Ohio that I've never tried. Here they are...

1st One:
1 (46 ounce) jar whole dill pickles
2 (1 ounce) packets Kool-aid unsweetened (any red flavor)
2 c water
1 c sugar

2nd One:
-Dump out half the juice in the pickle jar
-Add your favorite flavor of premixed Kool-aid to fill the other half
-Wait a few days and enjoy

They are pretty much the same, one just uses more of the actual pickle juice and the other more kool-aid. Have fun and let me know how they taste!

Red Velvet Cookies

1 Box Duncan Hines Red Velvet Cake Mix
2 eggs
1/3 cup oil
Mix all ingredients together. This will make a cookie dough. Roll into balls and place on a lightly greased cookie sheet. Flatten down slightly (depending on the thickness you desire). Bake at 375? until the tops crackle (about 8-10 minutes) or until desired doneness. Cool and then frost with basic cream cheese frosting.

Fruit & Nut Cake Mix Cookie

1 white cake mix (Betty Crocker
3 c flour
1 tsp Bk Powder
3/4 c water
3/4 c oil
2 eggs
1 tsp vanilla
1 c raisins (soak in water to plump
1 c chopped maraschino cherries
1 c chopped nuts

Bake 350 8-10 min. glaze while warm.

Cherry Cake Mix Cookies

1 package White Cake Mix or Cherry Chip
1/3 cup oil
1/2 teaspoon almond extract
2 eggs
1 cup candied cherries or maraschino cherries
1/2-1 c chopped nuts

Heat oven to 375 F. In large bowl, combine cake mix, oil, extract and eggs; stir with spoon just until thoroughly moistened. Stir in cherries. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Bake at 375 F. for 6-8 minutes or until edges are light golden brown. Note: For a new flavor try substituting 1 tsp. rum extract for the almond extract.

Lemon Bites

Yield: 72 Servings

18-1/4 oz pkg lemon cake mix
1 Egg
4 oz Container frozen non-dairy whipped topping, thawed
1/2 c Sifted confectioner's sugar

Preheat oven to 350 F. In a large bowl, combine cake mix, egg and topping. Batter will be very stiff. Drop by Teaspoons into confectioner's sugar. Roll into 1" balls, using sugar to keep dough from sticking to hands. Place balls of dough 2" apart on greased baking sheet. Bake for 10-12 minutes or until light brown on bottom. Transfer to a wire rack to cool completely. Store in an airtight container.

Cake Mix Cookies

I box of cake mix... any kind
I box of 8 oz. Kool Whip very soft.
1 large egg

Pour cake mix in large bowl. Whip egg with a fork and then mix it in the kool whip.. pour that into the cake mix and mix very well. Scoop out teaspoon on spoon and use another teaspoon to take it off the first one onto a plate of powdered sugar. Roll in the powdered sugar and put on to a cookie sheet. Bake 350 for 12-13 minutes. This makes a little over 3 dozen cookies..

Coconut Chip Cookies

1 package (18 1/4 oz.) white cake mix
2 eggs
1/3 cup vegetable oil
1 cup flaked coconut
1/2 cup semisweet chocolate chips
1/4 cup chopped macadamia nuts or almonds

In a mixing bowl, beat dry cake mix, eggs and oil (batter will be very stiff). Stir in coconut, chips and nuts. Roll into 1 inch balls. Place on lightly greased baking sheets. Bake at 350 for 10 minutes or until a slight indentation remains when lightly touched. Cool for 2 minutes; remove to a wire rack to cool completely.

Perhaps someone can offer some help ? If i accidentally type words (in a row) in UPPER CASE...how do i change them to lower case without deleting all of them...this happens often when i forget to take caps lock off. I'm merrily typing along and look up and then have to delete the whole works and start again...very frustrating !!!!

I don't have a manual to advise me and every time i log on to HELP it tells me that 'page is not available at this time and to try later'...
